Spiced Peaches with Nutty Dumplings

Ingredients
  • 1/2 cup low-fat biscuit and baking mix (such as bisquick)
  • 3/4 cup sugar, divided
  • 2 tbsp. chopped pecans, toasted
  • 3 tbsp. skim milk
  • 3/4 tsp. butter extract
  • 2 cups drained canned sliced peaches in juice
  • 2/3 cup white grape juice
  • 1/4 tsp. apple-pie spice
Directions

Combine baking mix, 2 tbsp. sugar, and pecans in a bowl. Add milk and butter extract, stirring just until moist. Set aside. Combine remaining sugar, peaches. grape juice and apple-pie spice in a medium saucepan; bring to a boil over medium-high heat. Drop dough into 4 mounds on top of boiling peach mixture. Cover, reduce heat to medium, and cook 8 minutes or until dumplings are done. Spoon peach mixture evenly into 4 dessert dishes; top each with a dumpling.

Note: There are about 2 2/3 cups drained sliced peaches in 1 (29 ounce) can. Store leftover peaches in an airtight container in the refrigerator for up to 5 days.
